Ingredients

  • 500 gr of Sardinian fregola
  • 600 gr of clams MSC certified lupine
  • 4 no artichokes
  • to taste 00 flour
  • to taste Frying Oil
  • to taste Parsley
  • to taste Garlic

instructions

  • Clean the artichokes; Tagliane 2 in 8 pieces, and the remaining, which will be fried, cut them very thin with a well -sharpened mandolin or knife.
  • Keep them separately in two bowls with water and lemon.
  • In the meantime, open the lupine clams with a clove of garlic and parsley stems, adding a glass of running water to obtain more cooking liquid and then cook the fregola.
  • Brown with a clove of garlic and extra virgin olive oil the two artichokes cut into 8 pieces.
  • Once browned, add a little water and cover with parchment paper until they are cooked.
  • Add the fregola to the same pot, let it flavor with the artichokes and add a little at a time the cooking liquid obtained from the lupins until the fregola is completely cooked.
  • Pass the thin cut artichokes in the flour and fry them in a pan with hot peanut oil, until they brown them.
  • Add the lupines and the chopped parsley in the pot with the fregola, stirring until the liquid becomes creamy.
  • Serve on the plates, spreading on it the fried artichokes dusted with a little salt.

Notes

The fishing of clams, or Lupini, in Italy has a long history. Initially considered a poor and hand -fished food for family consumption, in the 1950s she began to be taken for sale. The low and sandy seabed of the Adriatic Sea are an ideal habitat for the Vongola Lupino, which can be found up to 7 meters deep. The first MSC certified fishing activity in the Mediterranean is located in Italy, in Chioggia, and fishing clams lupine!
