A simple and traditional dish, succulent and typical: fava beans and chicory. Very common in Southern Italy, especially in Apulia, this dish is very easy to prepare.

Servings: 4 persone
Ingredients
- 500 gr Dried broad beans shelled
- 1000 gr Chicory wild
- 2 nr Onion
- 4 cucchiai Olive Oil extra virgin
- 1 cucchiaio Vinegar white wine
- qb Salt
- qb Pepper
Instructions
- Cook the beans covered with enough water to cover them.
- Let them boil over low heat and skim if necessary, season with salt and pepper.
- After about an hour, season with salt and stir vigorously with a wooden spoon until the beans are completely pureed.
- Remove from heat and stir in some oil.
- Meanwhile, clean and boil the chicory in salted water, then drain.
- Slice the onion and sauté in some oil.
- Add the well-drained chicory and cook for a few minutes to flavor.
- Serve the beans and chicory on the same serving plate, drizzling with more oil.

Notes
The fave e cicoria are excellent both hot and cold and can be served with fried peppers or raw sweet onion.
