Canederli can be prepared in various versions. In this recipe, however, we focus on speck canederli or Tyrolean canederli (Knödel).

Ingredients

  • 8 pcs bread rolls soak
  • 2 cups milk
  • 20 g Butter
  • 100 g Speck
  • 1 pcs Onion
  • Parsley
  • Broth
  • 3 pcs Eggs
  • Nutmeg
  • Salt

Instructions

  • Soak the bread in boiling milk for 30 minutes.
  • Sauté the diced speck in melted butter, add chopped onion and parsley, then remove from heat and let cool.
  • Mix squeezed bread, eggs, a pinch of salt, nutmeg, and the mixture of speck, onion, and parsley.
  • Form large mandarin-sized meatballs and cook them in broth for 15-20 minutes.
