Anchovies

Instructions

  • Clean the anchovies, gut them, wash and let them dry.
  • Trim, wash, and slice the fennel leaving some fronds of leaves.
  • Peel and finely chop the onion.
  • Heat the oil in a medium-sized saucepan.
  • Add the onion and fennel.
  • Sauté over medium heat for about four minutes.
  • Add the anchovy fillets, salt, and pepper, and cook for one minute.
  • Cook the spaghetti. Drain and place in a bowl.
  • Toss with the anchovy sauce and garnish with some fennel fronds.
