This tasty and quick first course comes from Sicilian cuisine, which always offers us flavorful dishes. The Spaghetti with fennel and fresh anchovies can also be made with whole wheat spaghetti.

Spaghetti
Fennel
Anchovies
Onion
Olive Oil
Salt
Pepper
Instructions
- Clean the anchovies, gut them, wash and let them dry.
- Trim, wash, and slice the fennel leaving some fronds of leaves.
- Peel and finely chop the onion.
- Heat the oil in a medium-sized saucepan.
- Add the onion and fennel.
- Sauté over medium heat for about four minutes.
- Add the anchovy fillets, salt, and pepper, and cook for one minute.
- Cook the spaghetti. Drain and place in a bowl.
- Toss with the anchovy sauce and garnish with some fennel fronds.
