A tasty first course with black truffle inspired by Venetian cuisine. A flavorful recipe featuring truffle with the addition of Piave DOP Vecchio Selezione Oro cheese, which gives a distinctive taste to this first course.

Attrezzature
- Non-stick skillet or casserole (to toss the tagliatelle)
- Grater (for cheese)
- Serving tongs (optional, to create the nest)
- Serving bowl or elegant deep plate
Ingredients
- 150 gr Cheese Piave DOP Vecchio Selezione Oro
- 400 gr flour
- 4 nr eggs
- 1/2 cup milk
- 100 gr butter
- q.b. truffle
- q.b. Extra virgin Olive oil
- q.b. Salt
- q.b. Pepper
Instructions
TAGLIATELLE
- Pour the flour into a bowl, add eggs and mix with a fork.400 gr flour, 4 nr eggs
- Continue kneading with your hands until you get a homogeneous dough.
- Let rest for 30 minutes. Roll out the dough, roll the sheet and cut into strips.
- Crush the tagliatelle with your hands.
COOKIE
- Grate Piave DOP Vecchio Selezione Oro, spread the cheese on baking paper and create a circle.150 gr Cheese
- Cook the wafers on a non-stick pan for a few minutes on each side.
- Remove from the pan and model into a nest shape with the help of a bowl.
COOKING AND TOSSING
- Pour the tagliatelle into boiling salted water.
- Drain the pasta al dente and toss directly in the pan with butter.100 gr butter
PLATING
- Place the cookie on the plate, create a nest of tagliatelle.
